1) Xanthan gum is highly viscous and water soluble. 1% xanthan glue solution viscosity is equivalent to the same concentration of gelatin solution viscosity 100 times, thickening, viscosification effect is significant.
2) Pseudoplastic rheological characteristics of Xanthan gum. Under the condition of constant temperature, xanthan gum solution can change reversibility of sol and gel with the change of mechanical force, so it is a emulsifying stabilizer.
3) Excellent temperature and PH stability. Xanthan gum can basically maintain its original viscosity and properties at a relatively large temperature (-18-120ºC) and PH(2-12), so it has reliable thickening effect and freeze-thaw stability.
4) Satisfactory compatibility. With acid, alkali, salt, enzymes, surfactants, preservatives, oxidants and other thickening agents and other chemical substances can form a stable thickening system, and maintain the original rheology.
